Domaine Tessier, Les Sables 2021
Domaine Tessier has recently passed from Philippe to Simon and Marie farming 24 hectares in the Cheverny Region of the Loire. Les Sables, appelation Cour Cheverny AOC, has an intense nose of yellow fruits, quince and a touch of oxidation adding to its complexity. It gives rich round notes on the palate with a long finish, and is cut nicely by a present acidity reminiscent of green apple. This particular wine comes from 40-year-old vines on sandy clay soils with silex and ages 10 months in wooden vats followed by 5 months in cement. The Sables pairs well with a white fish like turbot.
