Vivanterre, White ARS 2021

Patrick Bouju and Justine are at the helm of this collaborative project with Max and Rosie Assoulin, New York fashion designers. This white is a blend of Sylvaner and Riesling coming from old vines on limestone rich soils in Heilignestein. These late harvest grapes go through a direct press and are aged in Foudre. As ever on this project there is no fining, filtering or sulfur added throughout the process. Strong citrus flavours cut through the honeyed notes and held together by the body of this wine. The Vivanterre White ARS would pair with Teriyaki Salmon.
