A stunning dry white wine from the volcanic island of Samos (Aegean Sea, Greece) made by Patrick Bouju for Sous le Végétal, based on the rare Greek grape varietal Muscat Blanc à Petits Grains, part of the Muscat grape family. The Palli & Genesia is grown on pink granite soils and then fermented and aged in stainless steel vats, terracotta amphorae and concrete eggs. The palate is mineral driven and a step up in complexity and aroma from the Octave, saline, fresh and fantastically aromatic. The Palli & Genesia pairs well with rich and nutty cheeses like an Auvergne tommes.
