The Sous le Végétal project brought to life by Patrick Bouju and Jason Ligas does not disappoint. The Palli & Genesia is one of four vintages celebrating the Muscat de Samos grape, grown on the greek island of Samos just off the coast of Turkey. This vintage is the highest altitude of the four whites from an old vineyard that was brought back to life by Jason's team, thus the name meaning rebirth in Greek. The wine is aged in 750 litre amphora to produce a very fine and delicate dry moscatel with the vivacity and preciseness of a high altitude wine. The Sous le Végétal, Palli & Genesia 2018 pairs well with beef tartare.
