Sous le Végétal, Octave 2018
The Sous le Végétal project brought to life by Patrick Bouju and Jason Ligas does not disappoint. The Octave is one of four vintages celebrating the Muscat de Samos grape, grown on the greek island of Samos just off the coast of Turkey. Using grapes from the lower down villages of Pagondas and Platoons but also from the Mount Karvounis, his wine is aged in a mixture of 75 litre clay amphoras and egg-shaped concrete vats. The result is a powerful and energetic wine with a lengthy finish; balancing complexity with a fresh brightness. This Sous le Végétal Octave 2018 pairs well aged pecorino and fresh green beans on toast.
