Sous le Végétal, Livia 2021

The Sous le Végétal project brought to life by Patrick Bouju and Jason Ligas does not disappoint. The Livia is one of four vintages celebrating the Muscat de Samos grape, grown on the greek island of Samos just off the coast of Turkey. Aged in Stockinger barrels and egg-shaped concrete vats, Livia shows off the iodised notes of Muscat coupled with the freshness and salinity of the volcanic island and balanced with rich fruits. The Sous le Végétal Livia 2021 pairs well with spicy Laab lettuce cups.
