Sous le Végétal, Hüpnos 2018

The Sous le Végétal project brought to life by Patrick Bouju and Jason Ligas does not disappoint. The Hüpnos is one of four vintages celebrating the Muscat de Samos grape, grown on the greek island of Samos just off the coast of Turkey. Hüpnos means “Sleep” in Greek, the grapes are harvested from the dormant volcanoes Agii Sarandides and Mount Karvounis and picked at night when nature is asleep. The wine is then aged in 500 litre Stockinger barrels to produce a wine that has a beautiful minerality, rich complexity and a mixture of ripe and dried fruits on the palate. The Sous le Végétal Hüpnos 2018 pairs well with Arancini.
