Jeremy Quastana, Petit Bois 2025
Jeremy Quastana’s wines are distinctive with a firm identity, despite being relatively new to the practice. Mentored by Marcel Lapierre in Beaujolais and seasoned at Clos Ouvert in Chile, he tends two hectares in Loir et Cher. These clay-limestone plots of Pineau d'Aunis, Côt, Gamay and Pinot Noir are up to 40 years old, and border the vines of the late Olivier Lemasson where Jeremy also learnt the craft. His wines are expressive and fruit-driven, a result of carbonic and semi-carbonic maceration techniques he favours. Petit Bois 2025 is 100% Pineau d'Aunis from 8-10 year-old vines grown on silex-clay soils. Whole bunch, semi-carbonic fermentation takes place in fibreglass vats for 10-12 days before ageing for 6 months in 500 litre wooden barrels. The purest expression of this grape - light, juicy, peppery. Layers upon layers of crushed dark berries with a fresh, clean profile. Petit Bois 2025 would pair well with a Bahn Mi.
