Jeremy Quastana, Côtlectif 2025
Mentored by Marcel Lapierre in Beaujolais and seasoned at Clos Ouvert in Chile, Jeremy Quastana tends two hectares in Loir et Cher. These clay-limestone plots of Pineau d'Aunis, Côt, Gamay and Pinot Noir are up to 40 years old, and border the vines of the late Olivier Lemasson where Jeremy also learnt the craft. His wines are expressive and fruit-driven, a result of carbonic and semi-carbonic maceration techniques he favours. Côtlectif 2025 is 100% gently extracted Côt from older vines. A little semi-carbonic maceration allows for a soft, velvety mouthfeel to pair with the bright and expressive profile and body. Earthy base notes of forest floor are lifted by sharp cherry, red plum and cacao. Côtlectif 2025 would pair well with smoked oyster mushroom skewers.
