Extra-Brut and Extra-Special!! Domaine Fleury is found hugging the clay-limestone hillsides which were laid down by the first tributaries of the River Seine in the Late Jurassic. Situated in Courteron in southern Champagne, these rich sediments have been cultivating vines since the estate was founded in 1895. As 'custodians of the land', the Fleury family have pioneered low-intervention winemaking there ever since, even becoming the first Champagne domaine to switch to biodynamic management in 1989. Pinot Noir is both the dominant grape of southern Champagne and in Fleur d'Etoile Extra-Brut NV, complemented by a touch of Chardonnay for richness. With zero-added sulphites, fermentation takes place in Burgundy barrels before ageing for up to 99 months on slats. An aromatic, floral nose flows into flavours of sharp lemon curd and bitter cinchona bark. Perfect for celebrations. Domaine Fleury's Fleur d'Etoile Extra-Brut NV would pair well with Tarte Tatin - or more Champagne.
