Despite only recently joining the vineyards of the family estate, Théo Einhart has already shifted the winemaking style drastically. While the biodynamic practices solidified by his father Nicolas remain, maceration times are longer and more experimental, and a focus on zero intervention has been introduced. A full expression of the clay-limestone geology is the main aim and hand-picking (sometimes also vinification) takes place terroir by terroir. Eveil 23 is a classic Alsatian blend of Auxerrois (35%), Riesling (35%) and Gewürztraminer (30%) from south-facing vines. All the berries are macerated for 24 hours and then direct-pressed before ageing for 10 months in foudre on the fine lees. The resulting wine is rounded with a finely structured texture seemingly straight from the calcareous soils where it all began. Fresh nose of bergamot and lily complimented by even fresher flavours of pear and sea salt. Domaine Einhart's Eveil 2023 would pair well with fresh vegetable dishes like radicchio and walnut salad or Springtime crudités.
