Cantina Furlani, Macerato 2021
Nestled high in the Dolomites above Trento, Cantina Furlani, led by Matteo Furlani, cultivates vines at altitudes over 700 metres. Thriving in clay-rich
soils over schist and broken granite, termed sasso dolomitico, natural methods prevail, with biodynamic preparations integrated into vineyard practices. Sparkling cuvées, are crafted minimally, fermenting in cement tanks or glass demijohns without temperature control, yeast or sulphites. Traditional ‘Pergola Trentina’ vine training underscores the winery’s commitment to quality and sustainability, ensuring optimal vine health and terroir expression. Macerato 2021 is 100% Pinot Gris fermented for 15 days on the skins. Elevage takes place in barrels for six months before being bottled for the second fermentation and ageing for 24 months. Super fresh and juicy with a tannic bite similar to a just ripe peach. Macerato 2021 would pair well with a caramelised red onion tart.
