soils over schist and broken granite, termed sasso dolomitico, natural methods prevail, with biodynamic preparations integrated into vineyard practices. Sparkling cuvées, are crafted minimally, fermenting in cement tanks or glass demijohns without temperature control, yeast or sulphites. Traditional ‘Pergola Trentina’ vine training underscores the winery’s commitment to quality and sustainability, ensuring optimal vine health and terroir expression. Johannizza 2021 is 100% Johanniter, a lesser known grape native to the mountains of Trento. One week skin maceration during the first fermentation. Elevage in barrels for six months then bottled for the second fermentation and ageing for 24 months. Grapefruit soda vibes, citrusy and crisp with lemon peel bitterness - perfect for summer!
