The Bergkloster estate has been in the family for five generations, now tended by Jason who has been studying winemaking since 2013.. The mountainous vineyards cover around 8 hectares in Westholfen, growing from limestone and clay-marl substrate. Despite the risk, Jason prefers to depend almost entirely on nature during the growing period, harnessing the wind and landscape just as the Roman's once did in the area. Steeper slopes allow the sun to shine directly onto the grapes, resulting in full, fruit-forward wines. Grapes are hand-picked and wine undergoes spontaneous fermentation without fining or filtration. Pinot Gris mash fermented coming from a neighbouring plot in the village of Bechtheim, where they have been planted about 15 years ago. After harvesting the grapes were fermented on skins before being pressed into large old oak. Super lit would pair well with green olives and a slab of comté.
