Ajola, Rosso 'Once Upon a Time' 2022

Jacopo Battista of Azienda Ajola works to maintain the seventy five year-old vines of his 3.5 hectare estate in Orvieto, which intersects the boundaries of Umbria, Lazio and Tuscany. His wines are beautiful representations of the volcanic terroir, which were laid during the formation of the Apennines, as well as the vineyards harmonious relationship with nature. 100% Sangiovese grown on volcanic and sandy loam soils. Highly mineral and saline, this is a heavy hitting representation of the grape. Aged in old oak and chestnut casks. Savoury balsamic notes with plenty of bright forest fruits. Rosso 'Once Upon a Time' 2022 would pair well with grilled mushrooms and pan seared pointed cabbage.
