Azienda Ajola, run by our friend Jacopo Battista, is 3.5 hectares of old vineyards that he has brought back to life far from additives and industrial farming. His wines are representatives of the wonderful terroir on the heights above Lago di Bolsena and the harmonious relationship with nature. Made with local indigenous varieties Malvasia, Procanico, Verdello and Drupeggio, the wine undergoes spontaneous fermentation with maceration on the skins for approximately 20 days. It is then aged for 8 months in chestnut barrels. Fresh citrus and palo santo on the nose and on the palate a nice grip of tanin, rounded off by a beautiful depth of flavour with notes of dried apricots and honeydew melon. Maceration done by a master! The Ajola, Bianco Macerato 2021 pairs well with fatty white fish and butterbean stew.
