Jacopo Battista of Azienda Ajola works to maintain the seventy five year-old vines of his 3.5 hectare estate in Orvieto, which intersects the boundaries of Umbria, Lazio and Tuscany. His wines are beautiful representations of the volcanic terroir, which were laid during the formation of the Apennines, as well as the vineyards harmonious relationship with nature. The lighter of two amber hued oranges from Jacopo, this wine has 7 days of maceration in whole clusters and ages in stainless steel. Fresh and subtle, with earthy herbal notes like sage and honeysuckle. Local indigenous varietals were used including Drupeggio, Malvasia Toscana, Procanico and Verdello. Easy to drink but spritely, with a light white tea-like tannin making giving the wine more grip and intrigue. The Ajola, Bianco #2 2022 pairs well with marinated artichoke hearts and coppa.
