Ajola, Rosso 'Once Upon a Time' 2022

This 100% Sangiovese red is pretteir and more elegant than you might expect. Grown on soils of volcanic ash and sandy loam, the minerality and saline notes make this big heavy hitting, flavourful varietal more round and delicate. Jacopo aged the wine in old oak and chestnut casks which is the best way to treat sangiovese in our opinion. The palate gives a savoury balsamic note with plenty of bright forrest fruits. The Ajola, Rosso 'Once Upon a Time' 2022 pairs well with grilled mushrooms and pan seared pointed cabbage.
