The latter sees a combination of autochthonous Catalunyan and foreign varietals, while those in Alt Empordà are predominately hyper-local. By working this way, Salvador and the team encapsulate not only the wine traditions of the region, but also a mosaic of terroirs and climate. This energy flows through the wines, all of which are hand-harvested in accordance to the lunar cycles and made without filtering, fining, or any additives.\u003cspan class=\"Apple-converted-space\"\u003e Consciència Còsmica 2025 is 100% Carignan Gris from the sand-granitic soils of the Llocató vineyard. Direct-pressed, then s\u003c\/span\u003epontaneous fermentation in Austrian oak Stockinger oak barrels.
